Great Weekend of Celebrating the 4th of July!

We did not have any fireworks in our area other than downtown and we decided not to go this year.  We had our own fireworks with FOOD!
This is the closest to fireworks that we had...
...it is a Smoker!
Yep, it is smoking but you just can't see the smoke just like we didn't see fireworks.

We smoked our very first whole chicken with mesquite firewood chunks and charcoal.  There is a water pan too.

It is a very slow process with a very low flame.
4 lb. chicken, four hours!
Brought it in on the platter to make sure it is cooked thoroughly, surprise it was cooked, tender and extremely moist with the best "smoked" flavor we ever had!

This was our dinner!
I had the pokey (PC had the breast, of course) with corn (not from our garden), fresh carrot sticks and we finished up with cottage cheese topped with pineapple chunks.

My PC made this dinner all by himself for me!
It was fabulous with all fresh seafood; scallops, langostino, crab, shrimp with fresh mushroom, sweet corn right off the cob, tomatoes, onions and much, much more all done with tons of love!

This is PC's Cioppino!

We had the rest of the wine (it was also an ingredient in the cioppino) along with warm sourdough bread with soft butter.

Yum, I bet your mouth is watering!!!

Here is another wonderful dinner that My PC made for me!
Any guesses?
Jambalaya!
Yummy spicy sausage along with leftover smoked chicken, rice, celery and PC's special spices!
It was delicious~fabulous~tasty, I can go on forever trying to describe this dish but the best thing about this dish is I got to eat it!

We went from good old fashion slow cooking smokin' chicken to the San Francisco Italian Cioppino right back down to the south of Louisiana for some great tasting creole Jambalaya with a bit of Spanish and French influence!
We went all over our Nation for the 4th of July Weekend eating experience!
We hope your 4th of July Celebration was terrific and filled with excitement that was visual (fireworks) and tasty (food).
